FARM: Finca Inmaculada

VARIETY: Laurina

ELEVATION: 1,750–2,000 masl

Located in Colombia’s Valle del Cauca, Finca Inmaculada specializes in rare coffee varieties, including Laurina, Geisha, Sudan Rume and Eugenioides. The Holguín family combines high-altitude cultivation with precise fermentation and drying techniques.

Laurina is a naturally low-caffeine, rare Arabica variety. This anaerobic natural process enhances its distinctive character, with tasting notes of blackcurrant, dark chocolate, and malt.

Laurina coffee beans typically contain about half the caffeine of regular Arabica coffee beans, which is a significant difference, as caffeine contributes to the bitter and astringent taste in coffee.

The flavor profile of Laurina coffee is often described as smooth and mild, with floral and fruity notes. Due to its lower caffeine content, it is considered a coffee option for those who are sensitive to caffeine or those looking for a milder coffee experience. However, it's worth noting that the low caffeine content also makes Laurina coffee more susceptible to diseases and pests, which can make its cultivation more challenging. As a result, it is a relatively rare and specialty coffee varietal.

Grown primarily by the Hartmann family in Panama, it gained recognition after placing first in the Best of Panama Varietals category in both 2022 (94 points) and 2023 (92.38 points with the Gold Selection lot).It is an Ethiopian heirloom (landrace) from the Amaro region, introduced to Panama by the Hartmann family and named after Ratibor “Chicho” Hartmann. While some sources suggest a possible link to Geisha, the primary account describes it as an Ethiopian landrace. In the cupChicho Gallo typically shows vibrant fruit and delicate florals. Common notes include blueberry, strawberry, peach, lychee, and tropical or stone fruit, often with bergamot, white flowers, or black tea aromas. Exact flavours vary by lot and processing, but it is consistently valued for its sweetness, fragrance, and complexity.BrewingPour-over brewing highlights its nuanced profile, bringing out floral aromas, juicy fruit, and natural sweetness. With its Ethiopian heritage, strong competition results, and limited availability, Chicho Gallo appeals to those seeking something distinctive beyond familiar profiles. It offers a memorable sensory experience where floral elegance and bright fruitiness come together.
